Burren Smoked Salmon Summer Salad

Burren Smokehouse Smoked Salmon Summer SaladThe warm days and evenings are here again, and you don't want to spend them inside slaving away at the cooker. So why not make a light but amazingly tasty summer salad with some very healthy ingredients, like for example our Irish organic salmon?

Ingredients:

1 large cucumber, chopped into cubes
2 tomatoes, diced
1/2 red onion, chopped
100g Burren Hot Smoked Irish Organic Salmon, flaked
2 tbsp capers
1 tbsp caper brine
1 tbsp coriander (cilantro)
80 ml or 1/3 cup extra virgin olive oil
120 ml or 1/2 cup red wine vinegar
salt and pepper to taste

Directions:

Whisk together the olive oil, red wine vinegar, capers and caper brine, coriander (cilantro) and some freshly cracked pepper in a bowl.

Chop up the tomatoes, red onion and cucumbers into small cubes, and add them to the caper vinaigrette. Mix everything thoroughly. Cover the bowl and place it in the fridge to let it marinate for an hour or even overnight.

When you are ready to serve the salad, add in the flaked hot smoked salmon.  Salt and pepper to taste, and stir one last time before serving to ensure that everything is well coated.
