Brie & Smoked Salmon Canapes

Add a bit of luxury to your special days like the upcoming Valentine's Day. Instead of going out, assemble a few ingredients, serve the canapés on a fancy platter and serve with a nice wine. Like this simple recipe that can be done by even the most inexperienced "chef".


4 slices of (stale) bread - for ex. Brioche or sandwich bread
220g / 8oz Brie French goats cheese camembert
180g / 6oz of Burren Smoked Irish Organic Salmon
a few tablespoon of a berry jam


Start by toasting the slices of bread in the toaster. If you like, cut off the crust of the bread. Cut each slice diagonally across into four triangles, or into four squares.

Cut the Brie into thin slices and place them on top of the pieces of toast.

Separate the slices of smoked salmon with a fork, and roll them up loosely. Cut them to size and place on top of the brie.

With a small spoon, distribute small dollops of the berry jam on top. Optional:  garnish with fresh herbs like mint, basil or dill.
