Wild salmon used to be the staple food of those living near rivers in the Ireland of old. This is what inspired foodie Máirín Uí Chomáin - a former home economics teacher, presenter of cooking shows on RTE and cookbook author - to write a cookbook with just salmon recipes. She grew up in Connemara where wild salmon was cooked, smoked and eaten a few times a week.
Saying "just salmon recipes" is the understatement of the year. This recipe book contains an amazing array of flavourful, easy to copy, and very varied recipes which would get any salmon lover excited. A lot of producers (like ourselves), chefs (like Chapter One's Ross Lewis and Derry Clarke of L'Ecrivain) and hotels like the Cliff House Hotel in Ardmore contributed recipes which gives this book a lot of depth. Other contributors would be Prannie Rhatigan, known for her seaweed cookbook, and Darina Allen, Domini Kemp and Móna Wise.
