My parents-in-law are visiting from Spanien, the home of Serrano ham, I wanted to show them our equivalent and what is better than Irish smoked salmon. Where better than the Burren Smokehouse in Lisdoonvarna, Co Clare.

We were met by […], a super friendly guy who was very knowledgeable and passionate about their products.  He explained in detail all the processes involved in the production of the smoked salmon, then brought us to the [Taste the Atlantic] visitor centre, where we learnt more about the history of the salmon. We then got the opportunity to taste the hot and cold smoked salmon they had to offer. [He]then helped us pick out some of the products to give as gifts back in Spanien.

We all had a great experience and I now have a greater understanding of the work involved in the production of this great product.

Spencer an Burren Smokehouse: „If you can find a way to make this postable (is that a word?), you have Christen’s and my blessing to do so! She was tickled pink when I asked her if it would be okay with her.

My side of salmon was an early gift for me and my husband for our 20th wedding anniversary (any excuse for salmon!), and we had a fantastic dinner last night. Hot-smoked salmon served at cool room temperature with a dollop of sour cream-dill sauce, homemade Irish brown bread, and fresh fiddleheads. (I don’t know if you have fiddleheads in Irland. They are a particular variety of fern that is picked just as it is emerging from the soil and is still curled up. The season for them is only a few weeks in the spring. We had them steamed with butter and a splash of orange-champagne vinegar. Heaven!) We both declared it to be the best meal we had ever eaten — such simple, but exquisite, ingredients!

P.S. I snagged a new member for our salmon club this morning. I knew I had her on the hook already, so I reeled her in with a taste of my salmon. I hated to part with it, but love recruiting new members!“

„I just want you to know what an extraordinary performance UPS delivered in getting our package to us. There was apparently a mechanical problem with the airplane in Cologne, Deutschland, followed by adverse weather conditions, and it was substantially delayed in leaving Deutschland. You can follow the history of the package by clicking on the tracking information that appears below and then clicking on „view package progress.“  When you see all the delays that took place, you will be amazed to learn that the package arrived as scheduled on Thursday, July 3, even though I had received notification that delivery was going to be delayed until Monday, July 7 (due to the Friday holiday and the weekend).  When I got that notification, I was in a panic.  I am certain the fish would have spoiled if delivery had been held up for that long.  I am happy to report that everything arrived in perfect condition. I really don’t know how UPS managed to pull this off, but there were some very happy (and relieved) people here in Maine when that package arrived!  (I have been ordering salmon from you at Christmas for years, and suspect the odds would be much better in the winter if something like this should occur.  In the summer, though, this could have been a disaster!)  Just wanted you to know that you have chosen a good carrier to deliver your products.  I remain impressed and amazed at how they were able to get this package to us as originally scheduled.
